Homemade Cookie Butter Cups

Can we all agree cookie butter is pretty much the best thing since sliced bread? Or even since Nutella? Or since ever? It want to eat cookie butter on anything and everything. My favorite is probably eating cookie butter on cinnamon bread. I’m getting so hungry just thinking about it…you’ve gotta try that if you haven’t already. Even better, put cookie butter on apple cinnamon bread. Doesn’t that sound amazing? ‘Cause it is!

OK, I’m getting off topic…once upon a time, I made my own Reese’s peanut butter cups and figured it was about time I revamp that recipe. Ha, get it? Revamp…

Anyway, I’m going to make a bold statement here and say this might be the one candy that is actually better than Reese’s. Gasp! They should really get on board this cookie butter train, but it’s OK because I’m going to show you how to make them yourself, and that’s even better.

Ingredients (makes 18-24 cookie butter cups):

  • 2 cups milk chocolate chips (or dark chocolate)
  • 2 tbs vegetable oil
  • 1 cup cookie butter
  • 1/4 cup powdered sugar
  • 1/4 cup brown sugar
  • Mini cupcakes liners

Line a mini cupcake pan with mini cupcake liners. Place the chocolate chips in a microwave safe bowl, and microwave them on defrost mode for about 40 seconds. Stir and replace in 15 second intervals until the chocolate is completely melted. Mix in the vegetable oil to thin out the chocolate. This makes it a lot easier to pour the chocolate into the cups.

Start by pouring a thin layer of chocolate into each individual cup and stick in the fridge to speed up the hardening process.

In a small saucepan on the stove, melt the cookie butter on low heat. Stir in the powdered sugar and brown sugar with a spoon to thicken it (and sweeten it!) and remove it from heat. Let sit for 10 or so minutes to cool and move to the freezer to harden the mixture enough to mold.

Mold the cookie butter mixture into small balls and flatten slightly. Fit them inside of each cup, leaving space on each side for chocolate. Pour the melted chocolate over the top and gently tap the pan to distribute it evenly around the cookie butter filling. You can let them sit out to harden (it will take a while) or you can leave them in the fridge to speed up the process.

Once the chocolate has hardened, bite into one of these bad boys and experience heaven on earth in all its cookie butter glory. Seriously, one the best and easiest things I’ve ever made. Go on and amaze people! Seriously, they’re amaze-worthy. Enjoy!
